3½ cups flour
1 cup raisins
1 Tbs. baking powder
2 tsp. caraway seeds (optional)
¼ tsp. salt
2 Tbs. melted butter
1 scant tsp. baking soda
2 eggs (beaten together)
½ cup sugar
1 cup buttermilk
Mix together dry ingredients in a large bowl. Make a hole in the middle and add eggs, butter and buttermilk. Mix well with a large spoon. Knead on floured surface for several minutes.
Flour a medium size, round pan. You could use an iron skillet. Put dough into pan, shape out to edges. With a knife, mark a cross shape from side to side.
Bake at 350 degrees for one hour. The bread is done when you stick a knife in the center, and it comes out clean.
