2 cups complete pancake mix (the just add water kind)
1 can pumpkin pie filling
1 cup water
Pumpkin spice
Cinnamon
Vegetable or canola oil, for frying
Powdered sugar
Caramel topping

Prepare pumpkin pie filling as per directions on the can, without the milk, and add the pancake mix.  Mix well.  Stir in the water.  Mixture should be thick, add pancake mix or water, if necessary.

Set deep fryer to 350 degrees.  When ready, drop about a tablespoon of the mixture into fryer.  When the fritter rises to top, flip to brown both sides.  When golden brown, remove and place on paper towels.  Move to a serving dish, and garnish with powdered sugar and/or caramel topping.
