Babka - March 24, 2002

5 lbs. flour
1½ tsp. salt
1 grated lemon peel
1 cup sugar
4 Tbs. melted butter
¾ box of raisins, washed
7 eggs, well beaten
¼ tsp. cinnamon
¼ tsp. nutmeg
2 yeast cakes
1 qt. water

In a large bowl combine dry flour, washed raisins, cinnamon, nutmeg, salt and grated lemon peel.

In another bowl, dissolve sugar in melted butter and lukewarm water; add the 2 yeast cakes dissolved in warm water as per package directions; and add eggs. Combine this mixture with the dry ingredients. Knead well, cover with a cloth and let stand overnight. (If you start in the morning you can usually bake in the evening.)

Punch the dough down and pour out onto a floured surface; divide into four parts and place in baking pans, baste the loaves with a beaten egg. Bake loaves in a 350 degree oven for about 1 hour, or until nicely browned. Remove from oven and cool on racks.
